Consumers Look For Niche Markets As Options Expand Dr Ann Evans Of Anu College Of Arts And Social Sciences

As Australian society is becoming older and more diverse, we are seeing growth in the older ages as large cohorts of Australian’s age.

"Increased options for women have lead to strong labour force engagement of women which has impacted the workforce as well as family life," says ANU College of Arts and Social Sciences Associate Dean (Research) Dr. Ann Evans. Increased migration and changes in the countries of origin of migrants can also be seen, which lead to increased diversity of language, culture, and religion.

"The increased diversity of consumers impacts choice around the type of foods on offer and in the way that food is prepared and served. Restaurants need to make decisions around finding niche markets or providing an ever expanding range of consumer options," she adds.
